Free radicals (oxyradicals) are natural metabolic by-products of all living creatures. Our body naturally burns oxygen as fuel and this creates oxidized by-products. Scientists have known for a long time about the health benefits of increased glutathione levels in the body. But only very recently (1996) have doctors been able to increase intracellular glutathione naturally without negative side effects. Healthy levels of glutathione translate into a healthy immune system and increased longevity.
There are very few factors which are as predictive of our life expectancy as our level of cellular glutathione. It is well known that aging is accompanied by a precipitous fall in glutathione levels. “Lower glutathione levels are implicated in many diseases associated with aging, including cataracts, Alzheimer’s disease, Parkinson’s, atherosclerosis and others."2
An interesting study was conducted on Healthy Elderly Women which found that the physical and mental health of a group of elderly women (60-103 years) correlated significantly with their naturally high glutathione levels. These results confirmed "that high blood glutathione concentrations and excellent physical and mental health are characteristics of long-lived women."3 It is therefore being suggested that our glutathione level could be used as an indicator to predict how long we might live.
What is Glutathione?
Glutathione is a tri-peptide which is manufactured within each cell of our body provided three basic amino acids are present: L-glutamate, glycine and cysteine. Synthesis of high glutathione levels is critically dependent on the availability of dietary cysteine which is severely lacking in our diet and is therefore considered the rate-limiting amino acid.
After the age of about 20, levels of glutathione gradually decline on average 8-12% per decade. Levels are further diminished because of added stress, infections, environmental toxins, food chemicals, radiation, pollutants, drugs and poor diet etc. Studies have shown that low GSH levels lead to poor liver function thereby causing toxins to circulate throughout the body. Unless these toxins are removed they can quickly destroy key cell components (i.e.. cell membranes and DNA) resulting in rapid cell death and ultimate organ damage.
In summary, glutathione deficiency plays a significant role in the aging process which can ultimately lead to chronic illness and degenerative diseases such as osteoarthritis, fibromyalgia and chronic fatigue. Research indicates that abnormally low levels of GSH may indicate a risk for heart attack. Also low glutathione levels have been associated with neuro-degenerative diseases such as MS (Multiple Sclerosis), ALS (Lou Gehrig's disease) and Alzheimer's disease.4,5 Low glutathione levels are believed to contribute to over 200 medical conditions.

How Can We Increase Glutathione Levels?
1. Dietary Forms of GSH
-
found at highest levels in raw meat, raw eggs, unpasteurized milk, asparagus, broccoli, onions, avocados, spinach, cauliflower, walnuts and fresh tomatoes, however, absorption rates of GSH from food sources in the human gastrointestinal tract are poor
-
cooked vegetables contain only negligible amounts due to glutathione’s heat sensitivity
-
virtually absent in grains and standard pasteurized dairy products
It’s not surprising to find that raw milk contains many life-sustaining and protecting ingredients as it is an essential food source for all mammals. The bioactive components are necessary for the developing immune system to ensure healthy growth and development.
2. Glutathione Supplement

A study was conducted where 3g of glutathione was given to healthy individuals. The authors concluded that "it is not feasible to increase circulating glutathione to a clinically beneficial extent by the oral administration of a single dose of 3 g of glutathione."9

4. NAC - (N-acetylcysteine)
- a supplement containing cysteine used as a precursor for the manufacture of GSH

- excess (unused) cysteine has known side effects such as rashes, nausea & vomiting11 and pulmonary arterial hypertension (PAH)12
- long term use of NAC increases the excretion of zinc, copper and other trace minerals which will require supplementation
- individuals with amalgam fillings are advised against using NAC
Although NAC is a good source of the amino acid cysteine necessary for GSH production, it does have unpleasant side effects even in moderate doses, although they are considerably less than most other drugs. Dr. Wulf Dröge, Immunologist and former head of Cancer Research (Heidelberg Cancer Institute) found that he could elevate GSH using the drug NAC. He found it somewhat effective for short GSH elevation but with continuous use produced negative side effects. NAC, if taken orally, is catabolized in the gut and reduced to peptide chains and other metabolites before entering the bloodstream. Although intestinal absorption is rapid, bioavailability is poor (4-10%) and functional effectiveness lasts just over 2 hours. Levels fall off suddenly, even below normal. In order to maintain constant levels of glutathione, higher doses are required and more frequent supplementation is necessary throughout the day. It is believed that the excess cysteine circulating in the body is the cause of the negative side effects. NAC has been found toxic to nerve cells.13
According to Dr. William LaValley, Austin, Texas, an expert in the use of NAC in chronic conditions “a dose of 200-500mg/day is OK for most non-cancer patients. Long term high doses are probably not good and could lead to PAH.” Also, anaphylactic allergic reactions have been documented.14 For NAC contraindications, click here. 5. Whey Protein
Not all whey proteins are “created equal!” The level of whey protein derived from milk serum is dependent on the manufacturing process. There is great variation in both the protein level (20 - 90%) and composition of the whey powder. The whey serum fraction of fresh, unpasteurized milk contains powerful glutathione building blocks: lactoferrin, á-lactalbumin, ß-lactoglobulin & serum albumin. These are rich in the sulphur containing amino acid cystine (cysteine-cysteine). However, once milk is pasteurized using standard processing, the bioactive fractions lose their functional glutathione precursor effect. The degree to which these fractions undergo denaturing and mechanical stress will dictate their level of bioactivity. Unfortunately, most whey protein powders have low to no glutathione enhancing ability. As the weak disulphide bonds of cystine (cysteine-cysteine) have been broken, the cysteine thiol groups are quickly metabolized in the gut and are no longer available for GSH synthesis.
6. Bioactive (Undenatured) Whey Protein
Bioactive whey protein which has been pasteurized under a patented process, contains high levels of undenatured serum protein which ensures its glutathione-promoting potential. It is considered to be one of the richest sources of cystine (cysteine-cysteine) in our diet. It passes safely and undigested through the GI tract. It is then transported directly into the bloodstream and into each cell of the body. Once within the cell, the weak disulphide bonds are broken and 2 bioactive cysteine amino acids become available for GSH synthesis. As previously discussed, it is not surprising to find high levels of amino acids, especially cystine (rate limiting) in milk, as it is an essential food necessary for the developing immune system and healthy growth of young mammals.
It was Dr. G. Bounous, a well respected Canadian surgeon and immunologist from McGill University, Canada who discovered after 30 years of research, the mechanism for raising intracellular GSH naturally and without side effects. He was able to increase the longevity of his test animals by 30-50% when fed a bioactive whey protein which reduced their vulnerability to cancer and other diseases.
